Cocktail à la rose
Coupez aux ciseaux les pétales rincés de 8 à 10 roses doubles et parfumées
Mettez les dans un grand pichet de verre avec 100g de sucres, une demi-bouteille de vin blanc ou rosé et, selon le goût, 1 verre de cognac ou d'eau de vie
Couvrez et laissez reposer pendant environ 2heures
Ensuite passez, mettez au frais et , juste avant de servir, ajoutez une bouteille de mousseux.
Décorez de quelques pétales de roses.
Glaçon à la rose
Mettez une petite rose simple dans chaque alvéole d'un bac à glaçon déjà rempli d'eau
Plongez chaque rose sous l'eau et laissez prendre au congélateur
Confiture de gratte-cul
Portez 500g de fruit d'églantier à ébullition(détaches de leur tige, lavés, coupés en deux ,poils et pépins retirés)dans une casserole couverte contenant un peu d 'eau .
Laissez bouillir pendant 10 mn
Ecrasez au chinois à l'aide d'une louche(ce qui donne une purée de gratte-cul)
Laissez refroidir et mélangez avec 1 ou 2 clous de girofle, un peu de zeste de citron râpé, de la gélatine,400 g de sucre, une pincée de cannelle et 1 cuillère à soupe de jus de citron.
Dans une casserole, portez ce mélange à ébullition et laissez cuire pendnat 1 mn sans cesser de remuer(voir instruction pour la gélatine)
Versez dans des pots de verrre propres
Couvrez aussitôt les pots et retournez les 5 mn plus tard.
NOTA: Cette confiture est bonne pour la santé car elle est très riche en vitamineC. Elle donne un parfum de rose très caractéristique à la tranche de pain.
Sauce au gratte-cul
Portez à ébullition 250 de gratte-cul dans 100ml d'eau( voir instruction de préparation à la recette précédente)
Délayez 1 cuillère à soupe rase de fécule dans de l'eau froide et ajoutez dans la casserole puis laissez cuire pendant encore 2 à 3 minutes à petits bouillons
Laissez refroidir et parfumez avec du sucre et du jus de citron
NOTA: Cette sauce très riche en vitamineC parfume les entremets à la vanille, le riz au lait et d 'autres desserts.
